Matt Fuller, the Executive Chef has a clean and simple approach to cooking celebrating the best provenance ingredients which he sources from all over Dublin and Ireland. His cooking influences has brought him to some of the finest restaurants in Spain.

Matt has worked in the michelin starred Le Ecravain and Thorton's Restaurant in Dublin eventually taking charge of the kitchen of the 5 Star Deluxe Fitzwilliam Hotel.

He has a passion for Irish food of optimal provenance which is sourced from the best small artisnal foodmakers,farmers and fisheries.Matt likes to work with seasonal produce and is consistently adapting the menu to highlight the finest and available in the Country.
